Georgia’s Paddock Shiraz is approximately half of our entire production. We pick many tanks across several weeks; this allows us the comfort of harvesting some early, the bulk when optimal and letting a little hang at the riper end of the flavour spectrum. Each tank is fermented, pressed and kept in oak separately until blending. The result is complex, fresh red fruits upfront while layers of spice and chalky tannins follow to build weight. Once again vibrant and approachable now, yet with all the building blocks to cellar with confidence.
